Champagne and truffle event
" the dynamic National Council took prompt and effective action "

In mid-November three COVID-19 related challenges existed for the Bailliage.

Firstly, “Dolce Bubble Booster”, the annual winter event for HoReCa (Hotel-Restaurant-Café) professionals sponsored by Dolce Magazine, was not allowed to take place due to COVID-19 restrictions.

Secondly, the HoReCa students at the Vives University of Applied Sciences in Bruges, who normally gain useful live experience in banqueting events at the Dolce Bubble Booster, missed out as a result of it being cancelled.

Thirdly, the Bailliage of Belgium wishes to participate in the Jeunes Chefs Rôtisseurs and Jeunes Sommeliers Competitions so finances are needed for the arrangements.

Accordingly, the dynamic National Council took prompt and effective action. Due to their synergy they turned things round into a great success!

Conseiller Culinaire Jean-Baptiste Thomas, of the Michelin 2-starred Château du Mylord, created recipes and helped us to prepare a food box which we could send to participants.

The food box consisted of:
Ortiz anchovy fillets in olive oil (47,5gr)  |  Fresh goose liver (70gr jar)  |  Joselito Paleta (70gr)  |  Soya crackers (400gr)  |  Truffle butter (80gr)  |  Fresh autumn truffle (30gr)  |  Stainless steel truffle mandolin  |  Dried mini morels (24-pieces jar)  |  Fresh pasta (500gr).

Sommelier Dominique Crombé, Chargée de Missions, selected the champagnes for the food box pairing:
- Autréau Premier Cru Brut NV (Pinot Noir / Pinot Meunier / Chardonnay)
- Philippe Gonet ‘Signature Blanc de blancs’ Brut NV (100% Chardonnay)
- Mailly Grand Cru ‘Blanc de noir’ Brut Réserve (100% Pinot Noir)

The HoReCa students of Vives University provided the organisation. Chevalier Jan De Kimpe took on the role of “stage manager” of the digital event.

Of the revenue 10% went to the support funds for the Bailliage’s Jeunes Chefs Rôtisseurs and Jeunes Sommeliers Competitions.

It was a lovely evening for Chaîne members and for several others who discovered the Chaîne for the first time.

The positives to come out of the event were:
- Potential members discovered the Chaîne des Rôtisseurs
- Funds were raised for the two competitions
- Two Vives University students will enrol for the competitions
- Exposure to several newspapers and magazines.

The Bailliage of Belgium is ready for 2021!
