" Executive Chef Zübeyir Eskicibasi surprised us with an inventive and exciting menu "

After a terrible disaster which paralyzed the whole country, members and guests finally felt able to meet. Even though our area is far away from the earthquake location, we all have friends or relatives affected.

Chaîne events were cancelled and our National Bailliage supported those in need. It is in these times that friendship and ‘good feeling’ associations seem to be even more important.

We celebrated World Chaîne Day reuniting at the wonderful Belazur Hotel. We were spoiled by mixologists at the pool area with cocktails and enjoyed the creamy sweetness of the special World Chaîne Day heart-shaped luxury bonbons.

Executive Chef Zübeyir Eskicibaşi surprised us with an inventive and exciting menu.

Seafood in aspic with salmon caviar

Eel fillet with sauce

Potato ragu with corn

Fresh pine shoot sorbet

Seed-coated pigeon breast and lamb Wellington

Basil and vanilla bavarois

Chef Zübeyir decorated the bavarois not only with another Association Caritative de la Chaîne des Rôtisseurs (ACCR) heart but also with a beautiful crunchy chocolate butterfly. The butterfly stands for comfort, hope, and positivity.

After presenting the certificates during the closing ceremony, Bailliage Officers personally thanked all members of the service and kitchen brigades. The young Sous Chef was so excited about his participation in the event that he refused to let go of my hand. “Weren’t all the dishes magical,” he suggested. “Will you be able to sleep tonight? I won’t,” he said. I was surprised by his enthusiasm and daring remarks which were clearly a pure spontaneous expression from his heart.

To see this passion in the kitchen is the biggest sign of gratitude we, as Chaîne members, can receive. To know that the ACCR works towards finding and helping even more gastronomy lovers to find their passion is a heart-warming thought.

By the way, I told the young sous chef that I was going to be able to sleep that night without any difficulty. Delicious cocktails, fine wines, exciting dishes and great company are guaranteed to create happy dreams.
