“Les Ambassadeurs by Christophe Cussac” is a warm setting designed by Jacques Garcia where guests are invited to rediscover the flavours of the Mediterranean sublimated by the respect of French culinary art.

Yoshi, the only Japanese restaurant on the Côte d’Azur to be awarded a Michelin star since 2010, showcases the typically Japanese cuisine executed by Takeo Yamazaki, in a contemporary and audacious décor designed by Didier Gomez.

Odyssey, the lounge-restaurant designed by Karl Lagerfeld, offers a light and modern Mediterranean cuisine by the pool.

Trendy and elegant, the Lobby Bar with its terrace is the perfect place to enjoy delightful moments for a cocktail, lunch or dinner.

Christophe Cussac is a benchmark of simple yet great cuisine. Journeys like his belong to a certain kind: that of chefs who live through their era by being in the right place at the right time. Few can claim to have known the Jamin/Robuchon era (1981), followed by the Michelin 3-star Troisgros Frères at Roanne. Then to go on to the family-run Michelin 2-star L’Abbaye Saint Michel in Tonnerre (Burgundy), the Michelin 2-star Réserve de Beaulieu (at Beaulieu-sur-Mer near Nice), and finally the Métropole (since 2004) to accompany Joël Robuchon whilst still retaining those two Michelin stars.

Christophe observed, “Over time I have learned to simplify, to go straight to the products, without complicating them. My goal is that when someone tastes my cooking, they immediately understand. And remember it. That's my ideal. Keep it simple, but above all good.”

About the Hôtel Métropole Monte-Carlo
Ideally located in the Carré d'Or, a few steps from the Casino, the Hôtel Métropole Monte-Carlo overlooks the Mediterranean Sea. This luxurious Belle Époque property was built in 1886. In more recent times, it has been entirely renovated by the famous French architect Jacques Garcia, who has created a palace of 125 rooms and suites with Mediterranean charm in tune with the times, combining glamour and sophistication.

Grand Chapitre of the Principality of Monaco
On November 30, after a visit to Grasse, city of perfumes, and the Escoffier Museum of Culinary Art, birthplace of the great chef Auguste Escoffier, some of the participants in the Grand Chapitre programme had the delightful experience of tasting Chef Christophe’s cuisine. He did not disappoint with a menu including a first course of broccoli, bacon, carrots and orange vegetable jelly, followed by marinated sardine, caviar and Menton lemon. An outstanding lobster lasagna with tarragon, spinach and spianata (spicy salami) preceded the main course of Squab, creamy lettuce and Parmesan. A beech wood-smoked chocolate dessert brought the menu to a conclusion.
