Maître Rôtisseur Jean-Charles Métayer grew up in western France, in a family of restaurateurs. Graduating from Saint-Michel-Mont-Mercure cookery school in France Jean-Charles worked at Michelin 1-star French restaurant Fleur de Sel in England.

A student of master seafood French Chef Jacques Le Divellec, Jean-Charles worked as sous-chef in his Michelin 2-Star restaurant in Paris. Divellec sent him to Crete to take over the gourmet restaurant “Calypso” at the award winning Elounda Peninsula All-Suite Hotel.

Next: Chef at the Michelin starred “Varoulko” restaurant of Lefteris Lazaros. Followed by: “Premiere” kitchen of the Intercontinental Hotel in Athens. For three years he lived between Switzerland and Greece, taking over the five different restaurants of the iconic Grischa Hotel in Davos.

In Greece, he continues to work as a chef consultant receiving national culinary awards for the establishments “under his wing”. At the beginning of 2020, he created “Brio”, the first briocherie in Greece, as well as “Brilliant Tastes”, an all-day food bar in Nea Erythraia.

Le Pavillon is now the Chef’s “home” created with his friend and partner, businessman Angelos Kontaratos.

Jean Charles says, “At Le Pavillon I am putting together the finest culinary moments of my two homelands: France and Greece, Greece and France, combining treasures of the Atlantic Ocean and sea jewels of the Mediterranean Sea, creating with my heart, mind and soul.”

The culinary journey began in a quintessential part of the Chalandri neighbourhood in an impeccably renovated and unique venue. Le Pavillon prides itself on being one of the few typical neoclassical buildings of the Greek architectural heritage of the 1940s remaining today.

Inside the pristine white mansion with its evergreen courtyard, Jean-Charles Métayer welcomes his guests daily who come to enjoy an affordable “voyage extraordinaire” around the world of fine dining.
