In a recent interview with Chef João Sá, whose talent at his Restaurante Sála in Lisbon was recently recognized with a Michelin star, we were excited to know more about this Maître Restaurateur Chaîne Professional member in our National Bailliage.
His career began with a fascination for the simple transformation of ingredients through the alchemy of cooking, such as the metamorphosis of flour, water, and yeast into bread. Throughout his two-decade career, João pursued culinary excellence, a path that led him to Michelin recognition. His journey was marked by a constant search for improvement and deep questioning about what he really wanted for his restaurant, leading him to define a style that perfectly harmonizes with the multicultural identity of Lisbon.
João describes his culinary philosophy as a fusion of the cosmopolitan influences of Lisbon, enriched by his travels and the people around him. Due to his relationship to Africa, as his parents are from Angola, Chef João is willing to put a touch of his family flavours into his creations. This style is reflected in dishes that serve not only to nourish but to tell stories and evoke emotions.
His most memorable experience as a Chef involves interacting with customers who, touched by the essence of Sála, offer warm invitations to visit their countries, demonstrating the emotional impact of his cuisine.
João also shared about his recent involvement with the Chaîne, emphasizing how the fraternity strengthens professional ties and elevates culinary excellence. He strongly believes that the Chaîne plays a crucial role in promoting culinary professionals and establishments, providing greater visibility and recognition.
Looking to the future, João focuses on maintaining balance and satisfaction at work, enjoying the present moment, and exploring new possibilities for Sála. To emerging chefs, he advises that each should follow their own path and be the main critic of their work, remembering that external recognition, such as a Michelin star, should not overshadow internal value and customer appreciation.
