Dominique Naboulet perfectly embodies the soul and traditions of Nouvelle-Aquitaine. His life journey has been deeply influenced by key elements: the musketeers, their love of good food and their virtuosity in fencing, as well as the recipes carefully crafted by his grandmothers.
These culinary delights, enjoyed with family or friends, are the common thread of his attachment to the southwest, its traditions, its wonderful culture and the beauty of its nature, which he can never stay away from for long but always loves to share.
In 1983, while still a student, Dominique accompanied his parents to a Chaîne des Rôtisseurs lunch. This lunch, organized by their late friend Jean-Pierre Rollet, the local Bailli, marked a decisive turning point in his life. A few years later, Dominique was inducted during a memorable ceremony at the Intercontinental Hotel in Paris by Jean Valby, with Jean-Pierre Rollet as his sponsor.
The successors of Jean-Pierre Rollet in Aquitaine - Bernard Seignat, Bernard Lorang, and Claire Veaux - passed on to Dominique, through their elegance and friendship, a deep passion for respecting culinary traditions and the art of dining. This passion became a cornerstone of his life, illustrating the importance of the Chaîne des Rôtisseurs as a place of intergenerational sharing and transmission of history and values of our art of living, which have remained an essential reference for centuries.
For Dominique, passing on these values is crucial to our inner balance, enriching our daily lives and grounding us in a tradition that continues to live and renew itself through the generations.
