Formerly Conseiller Culinaire for the Bailliage of Denmark, Brian Mark Hansen, Head Chef at the Michelin 1-star Søllerød Kro in northern Copenhagen, has his own unique style and is considered one of Denmark’s most prominent culinary artists.

Classical French cuisine serves as the foundation of Søllerød Kro’s menu, but free from dogmas or limitations. Each dish is executed to perfection, but always with a touch of humour, edge and surprises. Some dishes evoke old memories, while others are guaranteed to create new ones. Chef Hansen says, “We challenge the familiar and make the unknown familiar.”

The Bocuse d’Or competition theme this year was fairy tales. Drawing on obvious inspiration from Denmark’s master fairy tale author, Hans Christian Andersen, Hansen’s menu made its mark with the jury by receiving unanimous approval.

Hansen’s victory in the 2023 Bocuse d’Or (“I have dreamed of this for 20 years”, he said) continues the success for Danish gastronomy. In 2021 the Runner-up was Ronni Vexøe Mortensen.

The Bocuse d’Or is widely considered to be one of the most prestigious cooking competitions in the world. Supporting Brian Mark in achieving the victory for Denmark were his commis Elisabeth Madsen and coach Christian Ebbe. The Danish team’s triumph is testament to their remarkable skills and dedication.
