The Bocuse d'Or is a biennial world chef championship. Named after the illustrious chef Paul Bocuse, the event takes place over two days near the end of January in Lyon, France, at the SIRHA International Hotel, Catering and Food Trade Exhibition. It is considered to be one of the world's most prestigious cooking competitions.

Chef Rôtisseur Carlos Pájaro led the Colombian team at the 2023 Bocuse d'Or. This was the second time the country had participated in the International Final, the first time in its history having been in 2021.

Originally from Cartagena, Carlos Pájaro is a graduate of the ‘Haute Cuisine’ programme at the Mariano Moreno School of Gastronomy where he trained as a Chef and Pastry Chef. Obtaining the best marks, he was awarded a scholarship to study for a year at the Institut Paul Bocuse in Lyon, France.

Chef Pájaro, together with other visionary and talented young people, have set their sights on turning Colombian gastronomy into an international level experience. They are committed to continue promoting the development of skills and competencies of those who are the future of Colombian gastronomy so that they can innovate through their culinary offerings and become the country’s best ambassadors.

In 2015 Carlos founded Grupo GP where he is Corporate Executive Chef. The company is dedicated to the world of delivery and restaurants that are accessed through digital applications with a wide range of gastronomic options.
