Attracting the next generation
" this year the Bailliage is continuing in its quest to grow the appreciation of modern fine dining in the country "

The Bailliage of Namibia, under the leadership of Bailli Délégué Sean Stevenson, has set itself the goal of making fine cuisine better known and above all, attracting the next generation to it.

Accordingly, it was no coincidence that the Bailliage’s Chapitre, its biggest event in 2022, was held at the hotel school of the Namibia University of Science and Technology (NUST). The evening was also supported by Gondwana Collection Namibia.

In 2023, the highlight of the year was a Gala Dinner at Immanuel Wilderness Lodge just outside Windhoek which is owned by German expatriates Sabine and Stephan Hock, respectively Dame de la Chaîne and Maître Rôtisseur members of the Chaîne. The event was an “international” one given the participation of 19 Chaîne members and guests from the Bailliages of Lower Saxony, Saxony-Anhalt and Thuringia in Germany.

It was not only the variety of animals and landscapes or the friendliness of the people that impressed the German members on their trip. They were also thrilled by their culinary experiences.

The final dinner menu of their visit reinforced the concept of culinary creations inspired by dishes from southern Africa. Namely:

Creamy biltong soup

Caprese twist with fresh mozzarella
cocktail tomatoes, rooibos balsamic threads
focaccia

Norwegian salmon
paprika essence, avocado paste
peppered cream cheese, crispy onions

Mint sorbet
Denver Wagyu steak grilled on charcoal
chimichurri sauce, sweet potato chips
beetroot puree, baby potatoes
roasted garlic emulsion

Mini milk tart
salted caramel ice cream on chocolate base
caramelized pear

Namibia has no shortage culinary delights which can be enjoyed whilst dining “with a view”. The country is renowned for local game dishes. Along the coast, inevitably there are wonderful seafood restaurants to be discovered that serve unique dishes.

Building on these outstanding dinners in recent times, this year the Bailliage is continuing in its quest to grow the appreciation of modern fine dining in the country, all the while looking to grow the membership of the Chaîne. Part of the recipe for success being European classics with African influences using local ingredients found by travellers throughout Namibia.
