Dr Jane Ruddick, BSc. MSc. PhD, Bailli Provincial de la Colombie-Britannique Honoraire is a food service professional with diverse, in-depth knowledge in all aspects of food technology, production and catering.
She joined the Chaîne as a Dame de la Chaîne in 1985 becoming an Officier in 1996. She served as Vice-Argentier to Baillis Bert Phillips and Gerald Korn before becoming Bailli of Vancouver from 2003 until 2011. She held the position of Bailli Honoraire of Vancouver from 2011 until accepting the appointment as Bailli Provincial of Colombie-Britannique in 2015.
Jane was very active with all the Bailliages of British Columbia being instrumental in the revival of the Bailliage of Okanagan in 2021. She also worked hard to ensure that young cooks in British Columbia were encouraged to participate in the Jeunes Chefs Rôtisseurs Competition at local, national and international levels.
As of October 2024, Jane stood down as Bailli Provincial of Colombie-Britannique but continues as an active member of the Bailliage of Vancouver. Previously awarded the national Silver Star of Canada award, the Bailliage of Canada was pleased to present Jane with its highest honour, the national Gold Star of Canada, at a recent event in Vancouver in recognition of her many years of outstanding service to the local, Provincial and national levels of the Chaîne. She is the first woman in Canada to receive this honour from the National Bailliage.
After obtaining Bachelor, Master’s and Doctoral degrees in Food and Management Science, Food Technology and Nutrition at the universities of London and British Columbia, she entered the food service industry as Food Science Specialist, working jointly with CP Hotels and CP Air. Responsibilities included the development and implementation of quality control and sanitation programmes for use by management and staff throughout the world.
From 1984 until 1990, she was promoted to Manager of Catering for Canadian Airlines International, responsible for in-flight foodservice around the world. In 1990, she established J. R. Food Consultants Ltd., a company based in Vancouver specializing in food safety, sanitation, quality control and food management consulting for the food service industry. Jane is also the author of numerous scientific papers and training manuals and is a long-time jury member for the Taste Canada Awards.
Through her affiliations with organizations, which include the British Columbia Culinary Arts Foundation, the Canadian Culinary Federation and Bocuse d’Or Canada, she is very involved in the administration, sponsorship and fundraising activities for Canada's culinary teams who compete in many prestigious culinary competitions around the world. Jane was the team advisor for the IKA Culinary Olympics for Team BC, a Team Advisor for the Junior Culinary Team, a Team manager for Culinary Team BC and Team manager for Canadian Bocuse d'Or team competing in Dubai.
Dr. Ruddick is a professional member of the Institute of Food Technologists, the Canadian Institute of Food Science and Technology, the Canadian Culinary Federation, and Les Dames d'Escoffier.
