Ingredients:
4 chayote squash
1 cup cooked quinoa
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels
1/2 red onion, diced
1 tomato, diced
1/4 cup chopped cilantro
1 teaspoon cumin
Salt and pepper to taste
Shredded cheese (optional)
Method:
1. Preheat the oven to 375°F (190°C).
2. Cut the chayote squash in half lengthwise and scoop out the seeds.
3. In a large bowl, mix the cooked quinoa, black beans, corn, red onion, tomato, cilantro, cumin, salt, and pepper.
4. Stuff each chayote half with the quinoa mixture.
5. Place the stuffed chayote halves in a baking dish and bake for 25-30 minutes, or until the chayote is tender.
6. If desired, sprinkle shredded cheese over the stuffed chayote during the last 5 minutes of baking until melted and bubbly.
7. Serve hot.
