Members and their guests gathered at the Alma Spanish Restaurant in the Melia Chongqing to celebrate World Chaîne Day (WCD). The event attracted nearly 30 members and guests, making it an incredible Chaîne dinner to kick off 2023. The celebration was a resounding success, signalling the Bailliage's triumphant return to action.

Embodying the WCD theme of "Come with Your Heart," Executive Chef Kevin and Restaurant Chef Andy poured their heart and soul into designing one of the most innovative menus we have ever experienced.

Every element of the dinner was meticulously crafted to create an unparalleled gastronomic adventure through the flavours of Spain. Using luxurious ingredients resulted in a truly indulgent dining experience to satisfy the most discerning palate

The amuse bouche set the stage featuring classic Spanish starters of exquisite salmon tartare and croquetas de jamón.

The “Joselito Cutting Show” is a must-see experience. Finest jamón paired with honeydew melon, olive oil, and balsamic reduction proved to be a harmonious blend of sweet and savoury that elevated this Spanish delicacy.

Showcasing the best of land and sea were two main courses offering a sumptuous feast for the senses: grilled Australian WX Waygu M9+ beef ribeye and classic Spanish seafood paella.

Basque cheesecake made the perfect finale.

As the night drew to a close, guests departed feeling content and delighted with their experience. Our WCD dinner stood as a true testament to the power of food and wine in uniting people. Members and guests forged connections over delectable cuisine and engaging conversation.
