Spotlight on the Bailliage's new Conseiller Culinaire
" Lamia is a great host who designs culinary immersions to discover Tunisian gastronomy "

Lamia Temimi joined the Chaîne as a Maître Hôtelier and recently has been promoted to Conseiller Culinaire.

She was born in Tunisia to an Algerian father and a Sicilian mother. As a result, she embodies the convergence of Mediterranean cultures in Tunisia. After 20 years spent travelling the world working in the high-end hotel industry, Lamia now runs a bed and breakfast on a farm in the heart of the Nabeul countryside 15 minutes from Cap Bon’s beaches. She also works as a sustainable tourism consultant. She is fluent in Arabic, French, English and Italian.

In late November following an oenological experience at Bir Drassen Cellars, Lamia organized and prepared a countryside lunch at her Sawa Rural Guesthouse. She crafted an exceptional menu highlighting local products and authentic Mediterranean flavours showcasing and celebrating the terroir’s treasures whilst symbolizing the region’s gentle lifestyle and Tunisian hospitality. With such a perfect touch on the pulse of gastronomy it is no wonder that Lamia was promoted to Conseiller Culinaire.

Driven by their passion for delicious food and local flavours, as well as a commitment to cultural understanding, Jamie Furniss and Lamia created “Sawa Taste of Tunisia” together (Sawa in Arabic means ‘together’) after meeting in Kobet Lagha, near Nabeul, in 2023.

NB. Jamie Furniss grew up in Canada's far north where his mother was a camp cook and his father a bush pilot. He developed an early passion for North African culture and the Arabic language. Sawa Taste of Tunisia is a way for him to share his passion for the culture and cuisine of the southern shores of the Mediterranean from Marseille, which he now calls home.

Lamia is a great host who designs culinary immersions to discover Tunisian gastronomy. Sawa Taste of Tunisia itineraries vary in length and focus on specific themes, locations and seasonal harvests.

Options include multi-day culinary journeys featuring cooking classes and workshops, tastings of typical products, guided market tours and gourmet walks. Taste buds are delighted. Sunshine in your heart and on your plate!

Together with a guide and a translator the Sawa Taste of Tunisia guests discover amazing off-the-beaten-track places carefully chosen after years exploring the country in search of new flavours and unforgettable experiences. Lamia loves introducing guests to Tunisia’s unique flavours, richness and culture that in what was once the “granary” of Ancient Rome.
