Conseiller Culinaire Chef Craig Cormack, a distinguished figure in South Africa’s culinary scene, has dedicated over 40 years to the art of cooking. His journey began in 2009 when he started exploring the intricate relationship between food, wine, and salt leading to unique tasting experiences at food and wine shows.

Throughout his career, Craig has been associated with several highly regarded establishments, including Overture Restaurant and The Goose Roasters which is their catering business. He is also a member of the South African Chefs Association.

In recent years, Craig, alongside his culinary partner Beau du Toit, co-founded The SALT Road which focuses on salting techniques and stories with each dish having a particular salting or cooking method.

Craig says, “This dining concept celebrates the historical and culinary significance of salt. Our mission is to craft sophisticated culinary experiences that delight the palate, drawing inspiration from the ancient salt trade routes.

Beau and Craig are an innovative duo who have curated the ultimate journey of their culinary artistry, incorporating different types of salts and salting techniques from all around the world. Craig declares, “Cook with flavour, keep it simple, and use your ingredients to their best potential.”

One of their notable ventures is at Waterford Estate in Stellenbosch, where Craig and Beau offer an unparalleled wining and dining experience at the Italian-themed winery. Craig’s expertise has also led him to international collaborations.

In February 2025 the "SALT Road" concept was expanded to Doha, Qatar - its first establishment outside South Africa located on the lobby level of the Andaz Doha by Hyatt. The SALT Road Doha restaurant boasts an offbeat menu inspired by global cuisine and woven with the complementing flavours of various types of tantalizing salt. Each course is cooked to perfection using South African culinary techniques.

Throughout his career, Craig has drawn inspiration from the rich history of salt and its pivotal role in human civilization. His passion for one of Earth’s oldest minerals has encouraged him to explore its various forms and uses, leading to a unique culinary philosophy.

Craig says, “I have been fortunate to cook for the rich and famous, as well as appear on many food networks as well as in magazines and newspapers. I am currently shooting a 15-part documentary series, about my favourite subject, namely “Salt”.
