We’re proud to present Tom Moreau, our talented young chef, as he prepares to represent the Bailliage of Belgium at the International Final of the Jeunes Chefs Rôtisseurs Competition in Istanbul on April 18, 2026.

As part of his journey, Tom is training during a nationwide roadshow, with a key moment happening at this year’s Artisan Trade Fair at Kortrijk Xpo on September 28th. This will be an exciting showcase of skill, creativity, and Belgian culinary excellence!

The Fair is a new event for the Belgian retail sector, focusing on quality and innovative products, solutions, and technologies. It combines the best aspects of previous events like Broodway, Meat Expo, and Taste of Tavola into a single experience.

We warmly invite all Chaîne members and visitors to come and cheer on Tom and help us spread the word about the Chaîne!

Our top-level coaching team includes:
- Kenzo Li: Chef and owner of L’Abstrait (Namur), Maître Rôtisseur, Silver Medallist at the International Jeunes Chefs Rôtisseurs Competition in Paris.
- Jelbrich Hendrickx: Chargé de Missions, driving force behind Sense for Food, with sharp insights in hospitality innovation and coaching.
- Michail Lapuri: Maître Rôtisseur, Owner of Bonami (Sint-Martens-Latem), blending world flavours and Asian influence in a chic, relaxed setting.
- Nicholas Tsiknakos: Maître Rôtisseur, Executive Chef of The Avenue @ Warwick Barsey, judge at the International Taste Institute - a true authority in global gastronomy.

The event runs from 11am to 4pm with a special moment at 2.30pm when we welcome Échanson Dominique Crombé and our young Sommelier Henri Vanbeselaere, who will share insights from their experience at the 2025 International Final of the Jeunes Sommeliers Competition in Geneva.

Let’s bring the Bocuse d’Or spirit to the Chaîne. Bring your energy, your voice, your passion. Trumpets, singing, and loud support for Tom are welcome!
