At the Bailliage’s dinner on November 8th at the Michelin 1-star Parsley Salon in Hellerup, Maître Rôtisseur Allan Schultz was honoured with the Bailliage of Denmark’s Medal of Merit in recognition of his long-standing and invaluable contribution to Danish gastronomy.
The National Bailliage’s Medal of Merit is given to individuals who, through special and remarkable efforts, have contributed to the promotion of gastronomy and wine, and who have demonstrated a professionalism that makes them worthy of this honour.
For years, Allan Schultz has distinguished himself as a chef with both humility, humour and a big heart for quality. This is especially evident in Parsley Salon, where the ingredients are selected with great care - both from the local area and the family’s own garden.
Allan Schultz began his career in 1985 and has worked at several notable Copenhagen restaurants, including Konrad and Café Victor. Today, he is at the helm of his own restaurant, Parsley Salon, which this summer received its first, and fully deserved, Michelin star.
In 2025, he won the cooking competition “Sol over Gudhjem”. He is also the man behind the concept “Legendernes Aften”, where gastronomic luminaries are invited to cook and share stories from their long careers.
