It is an exceptional opportunity to celebrate the 75th anniversary of a confraternity on the occasion of World Chaîne Day, and in an establishment that is part of Vaud’s historical and gastronomic heritage: the Hôtel Victoria in Lausanne.
Today, many members from the Canton of Vaud and other bailliages gathered to celebrate this anniversary in a festive, friendly, and gourmet atmosphere.
After Bailli Dominique Koeppel led the commemorative ceremony, a delightful aperitif preceded the traditional highlight of Confrérie gatherings: a delicious gastronomic meal accompanied by excellent wines.
This event was also an opportunity to recall the important role played by the Bailliage of Vaud in the creation of the National Bailliage of Switzerland in the Chaîne des Rôtisseurs, as well as its strong connection with the Hôtel Victoria. Toni Mittermair arrived there in 1966, became its director in 1969, and owner from 1980. He was inducted as a Maître de Table of the Chaîne des Rôtisseurs in 1973 in Munich. In 2023, he was awarded the title of Grand Officier Commandeur for 50 years of membership in the Chaîne, at the same time as his son, Antoine Mittermair, took over the management of the Victoria - ensuring the future of this jewel.
History of the Bailliage of Pays de Vaud
Together with the regional bailliages of Vaud, Geneva, and Valais, the first National Bailliage outside of France was Switzerland founded on May 26, 1951.
Demonstrating the Vaud’s dynamism, the first Grand Chapitre of the National Bailliage took place on December 6, 1951, at the Restaurant Métropole at the foot of the Bel-Air Tower in Lausanne. This event marked the beginning of a long tradition of celebrating culinary arts and gastronomy in Switzerland.
On June 19, 1953, the Bailliage of Pays de Vaud again organised a Grand Chapitre in a legendary venue: the Knights’ Hall of the Château de Chillon. The highlight of this event was filmed by the Swiss Newsreel.
Since then, the Bailliage has continued to grow. Today, it has the largest number of affiliated establishments in Switzerland - 19 in total, of which 11 are rated by Gault & Millau, including the exceptional 19/20 rating of the Hôtel de Ville in Crissier.
