On World Chaîne Day 2026, 19 esteemed members of the Chaîne des Rôtisseurs gathered at Lexx, the sophisticated wine bar at the Grand Hyatt Abu Dhabi, for an evening dedicated to the art of fine dining and camaraderie.
The event featured a meticulously curated menu that bridged the gap between delicate seafood and robust, earthy flavours, expertly paired with an eclectic selection of wines from Alsace to Bordeaux.
The evening commenced with a refreshing “Crémant d'Alsace Brut Comete” and elegant pass-around canapés designed to awaken the palate. The akami tuna tataki, brightened by yuzu and shiso, offered a refreshing start, while the veal tartare with black truffle and morels provided a sophisticated, earthy depth.
As members moved to the plated courses, the culinary team showcased a mastery of texture and balance.
The scallop carpaccio was a masterclass in delicacy, lifted by the saltiness of Sevruga caviar and a bright lemon vinaigrette. It was perfectly paired with a Vignobles Des 2 Lunes Terroir Riesling AOP Cecile. This Alsace Riesling surprised the table with its complexity blending flinty honeyed nuances with vibrant green apple and melon.
The second course featured impeccably baked miso cod. The buttery texture of the fish, accented by pickled ginger and pak choi, found a striking partner in the Burgundy region with a Chablis Moillard-Grivot. Its mouth-watering acidity and citrus-forward profile acted as a clean “cut” through the savoury miso glaze.
The centrepiece of the evening was the braised beef cheek. Slow cooked to the point of melting. Served alongside a velvety parmesan mousseline and a deep red wine jus. Châteauneuf-du-Pape by Famille Coulon, a classic Rhône powerhouse, provided the necessary weight to match the intensity of the braised beef.
To conclude, the casual but professional service, a curated cheese selection from France and Italy was served together with a wonderful Frank Phélan AOC Saint Estèphe, the second wine of the renowned Château Phélan Ségur. This red Bordeaux offered a refined structure and provided a sophisticated bridge between the salty cheeses and the lingering warmth of the evening’s conversation.
The intimate setting of Lexx, combined with the impeccable service of the Grand Hyatt team, ensured that this World Chaîne Day dinner was not just a meal. It was a memorable tribute to the global traditions of the Chaîne des Rôtisseurs.
