The Chaîne is delighted to announce the establishment once more of a National Bailliage of Bulgaria, marking an important milestone in the history of Bulgarian gastronomy and hospitality.

The establishment of the Bailliage extends the longstanding traditions of the Chaîne to Bulgaria thus creating new opportunities to celebrate the country’s rich culinary heritage while strengthening its ties with the international gastronomic community.

The official seat of the Bailliage will be in Devino, a rural village in northeastern Bulgaria widely known as the home of Dieci Boutique Restaurant, an acclaimed fine-dining destination founded by celebrity chef Gianfranco Chiarini and Sommelier Anna Chiarini.

Anna and Gianfranco have been the driving force in bringing the Chaîne back to Bulgaria after a gap of some 20 years. Following the Conseil d’Administration (the International Board of the Chaîne) approving Anna as Bailli Délégué of the newly formed National Bailliage, they have the official approval to move forward.

Gianfranco has been appointed Chancelier and Vladislav Atanasov will be the Argentier. Together with Bailli Délégué Anna they will work to promote the values that have defined the Chaîne des Rôtisseurs for more than 700 years: friendship, excellence, respect for culinary traditions, education, hospitality, and the appreciation of food and wine.

The intention is to provide a platform to showcase Bulgaria’s outstanding producers, vineyards, artisans, farmers, fishermen, hospitality professionals and regional culinary traditions while encouraging the exchange of knowledge and experience with members of the Chaîne around the world.

The founder members of the Bailliage will be formally inducted during a Grand Chapitre which will also mark the official inauguration of the Bailliage. Further details regarding this event will be announced once the date has been confirmed.

Establishing the Bailliage represents an important step in strengthening Bulgaria’s presence within the international gastronomic community while celebrating the country's culinary traditions and commitment to excellence.
