The Bailliage gathered to celebrate World Chaîne Day (WCD) at the Michelin-starred Brasserie 1893 inside the Waldorf Astoria Beijing. The Bailliage is definitely back in action! Attended by 60 members and guests it was the largest Chaîne event in Beijing for over four years. Declared a resounding success!
Following the WCD theme of “Come with Your Heart”, Executive Chef Christophe Riou certainly did just that. He put his heart and soul into creating one of the most innovative menus we have ever experienced. Classic French techniques honed in his native Brittany with a distinctive Asian influence.
Chef Riou and his all-star team combined ingredients in ways which were described as both “culinary genius” and “completely crazy”. It all worked, leaving every member and guest in awe. Especially noteworthy was the amount time Chef Riou spent in the dining room, explaining each dish and chatting with individual guests about his inspirations. His passion shone through and filled our hearts with joy.
Amazing food must always be paired with fantastic wines. Confrère Davide Lupi of China Wines & Spirits and Vice-Échanson Michael Delacruz conspired to curate special wine pairings from across Europe which perfectly highlighted the diverse flavours of each dish.
As the night came to a close, guests departed feeling content and satisfied with their experience full of memories of a splendid evening. Our World Chaîne Day dinner was a true testament that the power of food and wine has to bring people together. Members and guests bonded over exquisite cuisine and conversation.
