Celebration of Christmas at the Hotel Bristol

Director-General Simone Dulies and Maître Restaurateur Ferraro Luca invited the Bailliage Provincial to a Christmas Gala Dinner at the Hotel Bristol.
Since 1892 the hotel has been one of the best addresses in Vienna. Artists, stars, monarchs and business travellers have always appreciated the comfort, charming service and cosmopolitan flair.
The Hotel Bristol, always a source of inspiration, enchants. George Gershwin wrote his “An American in Paris” at the Bristol, Catherine Deneuve filmed in the bar and the Prince of Wales in the Thirties went with his beloved Wallis Simpson to Vienna and apparently lost not only his heart, but also his crown.
Members of the Chaîne and their guests were welcomed with a vintage Szigeti Blanc de Blancs Brut and delicious finger food. The excellent sparkling wine was sponsored by the Bailli Provincial of Burgenland, Peter Szigeti.
Special thanks went to the Hotel Bristol, which sponsored the youth tariff.
As a special tribute to many years of loyalty, Bailli Délégué Norbert Simon, who is a Member of the Conseil d’Administration, presented the Chaîne’s Silver Award to Bailli Provincial of Vienna Johannes Sailer.
A very professional staff served “golden egg with spinach espuma” as an amuse-bouche.
The next course, a duet of Ora King salmon with pea, pumpkin and blood orange was accompanied by a Grüner Veltliner Ried Stein 2021 from the J. Jurtschitsch Winery in the Langenlois.
We continued with a delicious Jerusalem artichoke foam soup with Jerusalem artichoke praline and champagne. The wine accompaniment was a Riesling Ried Kögl 2019 from the Salomon Winery in Undhof.
The intermediate course was a blueberry and rosemary sorbet infused with flavoured gin and a Szigeti Blanc de Blancs Brut.
As a main course, a “pink roasted duck breast” with apple red cabbage and truffled bread soufflé was cooked to the perfection. Accompanying it was a St Laurent Ladner 2020 from Bründlmayer in Langenlois.
Valrhona chocolate 75% with a seduction of raspberry made for a delicious dessert, outstandingly partnered by a Kracher Beerenauslese 2018.
Bailli Provincial of Vienna Johannes Sailer, Échanson Walter Höfle and Conseiller Culinaire Provincial of Vienna Roman Keller paid tributed to the outstanding achievements of the kitchen and service staff, which was confirmed by enthusiastic applause from the guests.
The Bailliage of Vienna wished all members and their guests a Happy New Year 2023.
