The National Bailliage held its 2025 Grand Chapitre over three January days in Copenhagen.

Thursday 23rd
Dinner at Restaurant Kappo Andō which was quickly sold out. Kappo is a Japanese word meaning “to cut and cook”. It refers to a more intimate, informal eatery where a selection of dishes can be seen prepared right in front of the guests. The team behind Kappo Andō consists of Japan enthusiast Master Sake Sommelier Henrik Andō Levinsen, his wife, Chef Akiko Andō Levinsen and Chef Mads Battefeld,

Friday 24th
Restaurant No 2 opened its doors for a fantastic dinner created for the occasion. Located alongside the quay, diners get a great view of the harbour bridges and spires of Copenhagen. With No 2 the owners of a|o|c (Christian Aarø - Échanson of Denmark - and Søren Selin), have created a relaxed environment for a great dining experience with their own take on the Nordic kitchen.

Saturday 25th
New Year’s Gala Induction Evening at the Hotel d'Angleterre. The programme started with the formality that is an Induction Ceremony. It saw the awarding of 42 ribbons to both new members and promotions.

A Chaîne Bronze Award was presented to Chargé de Presse Finn Elkjær in recognition of his great efforts on the National Board. Pair de la Chaîne Karen Søgaard received her Officier Commandeur Award for 30 years of Chaîne membership. Officier Maître Hôtelier Johannes Jensen was awarded the Bailliage of Denmark’s Medal of Merit.

The exquisite Gala Dinner was enjoyed in the Palmehaven with the participation of 177 guests from near and far.

Finally - and as tradition dictates - Chancelier Thorbjørn Moy took to the floor. He gave the appreciation to the kitchen and service brigades who, he declared, had exceptionally given us the very best. Service pins were awarded to the staff members in both brigades as a thank you for a fantastic evening.
