This year, the Bailliage of Los Cabos joined the global celebration of World Chaîne Day with a spectacular lunch event at Don Sanchez in Los Cabos.
Located at the southern tip of Mexico’s Baja California Peninsula, Los Cabos is known for its stunning beaches, vibrant culture and dynamic culinary scene.
Under the leadership of Bailli Fabrizio Frías, the Bailliage developed a special concept for the 2025 World Chaîne Day “Tastes of the World” theme, bringing together the unique flavours of six talented chefs, each representing a different country.
The Chefs presented these extraordinary dishes with wine paired with wines selected by the Bailliage’s Vice-Echanson:
Volker Romeike (Germany)
With over 40 years of experience, Chef Romeike presented a lobster cocktail with citrus mayo, brandy, horseradish cream, mock caviar and quail eggs.
Wine: 2017 Tokaj Hárslevelu from Hungary
Emanuele Olivero (Italy)
A master of Italian tradition, Chef Olivero offered a braised artichoke stuffed with ossobuco and caramelized piquillo mayo.
Wine: 2021 Garage Wine Co “Phoenix Ferment” from Chile
Sébastien Agnès (France)
A Maître Cuisinier de France, Chef Agnès serves a foie gras-stuffed quail ballotine with herb salad and cherry mustard.
Wine: 2018 Prieler ‘Johanneshöhe’ Blaufränkisch from Austria
Edgar Román (Mexico)
Awarded Chef of the Year 2023, Chef Román presented a papadzul with wild mushroom relleno negro.
Wine: Nihon Sakari Junmai Sake from Japan
Elena Sors (Lebanon)
Renowned for blending Middle Eastern and Mexican flavours, Chef Sors prepared lamb rack with taratur sauce, za’atar potatoes and pomegranate molasses
Wine: 2021 Peter Lehmann Shiraz from Australia
Carlos Ortega (Mexico)
An acclaimed pastry chef, Ortega closed with a terrine fusing Asian rhubarb, South American tapioca crisp and Greek yogurt ice cream, infused with Mediterranean basil and European tarragon syrup.
