Starting the year with the future of the Chaîne

To start the new year, the Bailliage of Belgium invites its members to a day dedicated to terroir, transmission and excellence, guided by our Jeunes Chefs Rôtisseurs competitor Tom Moreau.

On January 31st, our young Chef Tom Moreau will welcome us to his region of Silly, offering a deep dive into the producers, landscapes and inspirations that shape his cuisine. This is just weeks before he represents our colours at the 2026 International Final of the Jeunes Chefs Rôtisseurs Competition in Istanbul on April 18th.

More than a gastronomic event; it is a true immersion into the foundations of craftsmanship.

Programme
1pm - La Table de Jeanne, Silly
Welcome drink, refined nibbles and a personal introduction to Chef Tom Moreau and his team.

2pm - Château de Fouleng
Visit to the Château’s gardens, a key source of inspiration for Chef Tom.
Meet market gardener Jean-François Tondowski.

4pm - Thoricourt Cheese Dairy
Visit and tasting at the renowned Thoricourt fromagerie, featuring exceptional Gouda.

5.30pm - Domaine W. Tubize
Visit and tasting at one of Belgium’s most acclaimed vineyards.

7pm - La Table de Jeanne
Six-course gastronomic dinner created and executed by Chef Tom Moreau and his brigade

Mackerel
Isigny cream, pain d’épices, onion, leek

Escalope of foie gras

Pike quenelle
parsley, Nantua sauce

Veal, served mi-cuit

Duck Wellington

By taking part in this day, members will enjoy far more than an exceptional all-inclusive experience. They will stand behind a young chef at a decisive moment, supporting the next generation of the Chaîne before the international challenge.

Ticket price is 199 euro inclusive of visits, tastings, transfers between locations and the full gastronomic dinner included.
