A long-awaited affair which was delayed due to the new norms we now face with social gatherings had at last arrived.
This year we hosted our festive event at Indigo at The Blue Mansion led by our talented Chef Jack and his dedicated team. On the cards was a lovely evening amongst good company filled with good wine, good conversation and of course good food.
Chef Jack started us off with silky smooth Hokkaido scallops accented with kaffir lime and pomelo. Following was a delicate, rich slow-cooked egg with Oscietra caviar and then it was on to a refreshing Greek-inspired sea bass dish.
Our fourth course was a very generous portion of foie gras complemented by two pear tortellinis. As for mains we had a meat choice: New Zealand lamb loin or Australian Black Angus. Atlantic cod was offered for our non-meat eaters.
The dinner ended with a delightful Mont Blanc that was rich and velvety smooth, yet you felt you were tasting clouds.
Food was abundant. Wine flowed throughout the night. A combination of flavours took us on a journey through our senses that combined local Peranakan spices with freshly-imported ingredients.
We truly had a wonderful night out with members and invited guests new to the Chaîne gastronomic experience.
