" an outstanding dinner worthy of a Chaîne des Rôtisseurs’ Grand Chapitre "

During the pandemic, changes also occurred in the management of our Bailliage. Most notably Tomaž Ravnikar decided to stand down as Bailli Délégué. His successor is Seku Condé.

For this eighth Gala Induction event in the Bailliage’s history, Seku and his team decided to organise a three-day Grand Chapitre in the Brda region on the Italian border. We were delighted to welcome three members from Croatia. A great opportunity for further joint activities between our two Bailliages.

On Friday, April 1st, we visited the Ščurek winery, one of the most famous Brda wine estates.

The Induction Ceremony was held on the Saturday in the renovated Villa Vipolže at Dobrovo v Brdih among the Brda hills near Nova Gorica, the region’s main town. The ceremony was followed by a Gala Dinner at Gredič Castle where some members also stayed the night.

The Executive Chef created a wonderful menu with his culinary team. Of course excellent Brda wines and one from neighbouring Italy partnered the courses.

Chopped venison
egg yolk foam, horseradish cream

Creamy corn soup

Ravioli stuffed with rabbit meat
caramelized carrot cream with Parmesan ‘laces’

Saddle of lamb with a roasted crust
pea puree, cranberry sauce and onion jam

Chocolate soufflé
topped with truffle and coarsely ground hazelnuts

In short, it was an outstanding dinner worthy of a Chaîne des Rôtisseurs’ Grand Chapitre. When the kitchen and service brigades presented themselves at the end of the evening a standing ovation greeted them. They say the applause says it all!

On Sunday 3rd we visited the Bjana winery in Biljana. With this wine tasting the three-day programme came to a very successful end. The organisation went smoothly, with no complications or inconvenience.
