Bailliage members and their guests, led by Bailli Délégué Don Hall who is a Member of Conseil Magistral, celebrated World Chaîne Day (WCD) with a sustainable “green” themed lunch outdoors in the sunshine.

Chef Pedro Almeida at Albergue 1601 - the perfect venue to go green in Macau - conjured up a special menu to the delight of everyone.

Abade de Priscos pudding

It was a fun and joyful lunch with a unique menu.

Abade (Abbot) of Priscos pudding is a typical Portuguese dessert being a rich crème caramel pudding created by Father Manuel Joaquim Machado Rebelo, the Abbot of Priscos, in the 19th century. The pudding is unique in that it contains bacon and a very large number of egg yolks, as well as sugar and Port wine.

All the wines served were Portuguese. Located just west of Lisbon along the Tagus estuary, Villa Oeiras, source of the dessert wine, is a historic winery producing sweet, fortified wines from Arinto, Galego Dourado and Ratinho grapes.

Dame de la Chaîne Edith Cheong was seen to comment on the Social Media Wall that the lunch was an “extraordinary occasion”.

Mary Mendoza posted, “Green denotes the colour of nature, luck, hope, vitality, ecology and sustainable food. The gastronomic meal prepared by the Chef and team at Albergue was mouth-watering. The selected wines from Portugal were a perfect representation of our Macau culture. It was a joy to break bread with Chaine Macau members and enjoy the camaraderie.”
