The Bailliage celebrated World Chaîne Day at Pácifera Restaurant within the Casa Urbina Wine Resort, an exciting project developed by owner Roberto Urbina.

With a warm, elegant concept and young, innovative cuisine, the restaurant offers dishes which work hand in hand with the winery, where wines have been produced since 2011 with excellent quality to achieve appropriate menu pairings.

Continuing with the concept of Pácifera, where its emblem is olive trees, a whole “Green” environment was created with these symbolic trees. Since ancient times, in civilizations and religions, the olive tree represented immortality, healing, fertility, victory, peace and reconciliation. That is why it was chosen for this important celebration. Fresh olive branches accented with lavender flowers, both local crops, dressed the tables.

Golden details were observed in the cutlery as well as the Chaîne ribbons. A centrepiece of an engraving in wood and ironwork with the name of the Confrérie was a well-received gift from the hosts. Natural fibre fabric tablecloths and different shades of green were appreciated in vases, chairs and napkins that embraced the elegant menu card.

The event opened with a welcome cocktail where pesto crostinis with heirloom tomato and aged goat cheese were offered. Immediately, a great visual and taste sensation with a green shrimp aguachile cured with ginger, cucumber and scallops, topped with a tomatillo jelly, onion and coriander flower. When presented, a velvety emulsion of cucumber, coriander, onion and celery was added around it. Excellent starters, paired with a house sparkling wine.

Luis Alonso Robles Ahumada, a 25-year-old native of Ensenada, Baja California, led the kitchen brigade in creating the culinary art that delighted palates with great satisfaction.

Members and their guests had a wonderful experience with this menu designed especially for their World Chaîne Day “green” celebration.

Ending the event, moments of friendship and fraternity were reflected in the photos where the colours of the sunset in the valley were captured. That day, green - the colour being so beautiful that it represents life - was present in all its splendour and all its forms!
