Chaîne members joined together revelling in a masterfully prepared and presented night of gastronomy at Michelin-starred Ryota Kappou Modern Restaurant.
Chef Ryota Kanesawa together with his assistants were a symphony in motion meticulously preparing contemporary fare in the open kitchen. His concept is “Simplicity Excellence,” unveiling the potential of highest quality employing his creativity and skills maximising flavours, textures and colours.
Members and their guests enjoyed savouring a unique culinary menu exclusively prepared for the Chaîne including such delicacies as “suppon”, the gourmet Japanese soft-shell turtle soup.
Other delights were shark fin; black abalone bafun uni tempura; seasonal sashimi; signature bowl of wonder; grilled crispy sea perch with roasted eggplant; sukiyaki style Kyoto Wagyu katsu; grilled amadai ikura rice. Black truffle pudding with strawberry spring rolls was the climax.
Complementing beverages included: Champagne R.H. Coutier; Dassai Elegant Sake, Toyo Bijin Taihaku Ginkgo Sake, and a very limited edition Ramonet Barrels Masuizumi Private Reserve Junmai Daiginjo Sake.
