The Bailliage hosted a glamorous banquet at the Mediterranean Garden, located 320 meters high in the sky. Sponsored by Raffles Shenzhen and Koya Brandy, it was named “Gastronome feast in the clouds: Delicacies originated from the Mare Mediterranean.”
Hosting a banquet at the highest concert hall in the world - certified by Guinness World Records - originated from a brainstorming session with Samuel Wong, Raffles Shenzhen’s General Manager. With his support, Michelin-starred restaurant Master Chef Gordon Guo and his team designed an unconventional version of Chinese fine dining using seasonal ingredients, sea salt and Mediterranean flavours.
Exquisite dishes led the guests to a high level of joyous, spiritual fulfilment:
- cold served abalone with sea salt soup
- double boiled sea whelk soup with scallop and green olive
- braised sea cucumber with fish maw
- pan-fried M9 marbling beef with pepper.
The 10-year and 15-year Koya Brandies, the best Chinese brandy brand, were served. Food and liquor in the glamorous Mediterranean Garden created an unforgettable experience of Chinese fine dining with top-rated Chinese grape spirits!
Raffles pastry team specially designed savoury and sweet pastries for the banquet including smoked salmon rolls with Mediterranean yogurt sauce; lemon cheese mousse with sea salt; Furthermore, Samuel Wong invited Quentin Lechat, Pastry Chef of the hotel’s Michelin-starred restaurant to present his creative dessert with sweet and romantic flavours to the guests in Shenzhen, right after serving the very same to Frances’s President Macron in Paris.
The food and wine tasting culminated in a raffle. Courtesy of Raffles Shenzhen the top prize was a one-night stay in the Presidential Suite at Raffles Hotel Dubai for two.
Tailor-made suits are Samuel Wong’s usual attire. What a surprise when he transformed into a trendy disc jockey. His upbeat energy and finger-spinning skills filled the room with fun beats and rhythms. Dancing non-stop created a sea of joy and passion. The atmosphere was lively and impressive. Laughter and applause filled the entire concert hall.
