Joël Robuchon, loyal to the Rôtisseurs of Monaco
It was at the instigation of Chancelier Patrick Estachy that about a hundred members and guests had the pleasure of meeting the international star of gastronomy in person.
To this end, the Bailli Délégué Gérard Canarie organised a dinner at the Joël Robuchon restaurant in the Métropole hotel in Monte Carlo, to meet the renowned chef.
What a joy for the many guests present to pay homage to the “Chef of the Century, recipient of 28 stars” and sample his new cuisine.
Health takes centre-stage in Joël Robuchon’s latest book, “Food & Life - Le Goût et la Vie”, as illustrated with the menu offered:
Foie gras royal with Port and Parmesan
Duo of beetroot and apple with avocado
Bitter salad and green mustard sorbet
Calf’s cheek confit with asparagus and morels
The Chef’s legendary potato purée
Strawberry and rhubarb compote with a hint of basil
Provençal nougat crisps
A Chablis Premier Cru and a Saint-Émilion Grand Cru provided a harmonious accompaniment to this excellent spring-time dinner.
The guests were delighted with the quality of the dishes and wines that were served.
This was another great culinary moment following the wonderful evening at the Monaco Automobile Club on February 20th!
