Officier Maître Rôtisseur Chef Morles is a passionate culinary leader from Caracas with over four decades of experience.

Luigi Morles infuses his dishes with the vibrant flavours of Venezuelan and Italian traditions. Over the past 42 years, he has had the privilege of leading esteemed kitchens like the Hotel Pippo Internacional and various L Hotel properties. His culinary expertise has graced renowned restaurants such as Kalu Margarita, Le Petit Bistro de Jacques, Mezzanotte, and Cala.

For over a decade, Chef Morles has held the distinguished title of Officier Maître Rôtisseur in which senior Chaîne role he has had the honour of collaborating with passionate individuals across Venezuela who significantly contribute to our nation’s culinary scene.

He was the Chef behind the opening of the Amazonia Grill Restaurant in Las Mercedes, Caracas, and the creation of the famed Los Guillaos Pastrami Sandwiches also in Caracas, featuring his signature recipe.

Today, Luigi Morles continues to provide consulting services for exciting culinary projects and with great pride and enthusiasm sells his signature smoked products.

The passion for smoking shines through in his delectable offerings. He has even designed and built his own artisanal oven specifically for smoking fish, such as needlefish, tuna loin, local shark and a unique octopus dish. As well as fish, Chef Morles smokes meats such as chicken breast, pork loin and ostrich.
