Executive Chef and Co-Manager of NUMA, Nuno Martins began his career in hospitality at a very young age before pursuing an academic path in Civil Engineering. However, in 2008, a challenge reignited his passion for cooking, prompting him to trade engineering for culinary creation.
Nuno’s dishes are characterized by four fundamental pillars: seasonality, sustainability, quality, and product dynamics, always focusing on zero waste. After intensive training in Professional Cooking and Pastry, where he perfected his cooking techniques, Nuno worked in various prestigious restaurants and hotels in the Algarve and the United Kingdom.
Currently, his restaurant NUMA is among the 20 new restaurants recommended by the Michelin Guide, standing out for Nuno's commitment to quality and culinary innovation.
Regarding the Chaîne des Rôtisseurs, Nuno had always been curious but unsure how to join this fraternity. The turning point came through the restaurant’s clients, who introduced him to Marie-Anne Ferran, Chargée de Missions with the Bailliage of Portugal who continues to act as Bailli of the Algarve.
Following an invitation to prepare a dinner for the Chaîne at NUMA, Nuno embraced the fraternity becoming a Maître Restaurateur. “Now all that’s left is the ribbon… I hope it will be soon,” says Nuno, who at last joined the Chaîne in March this year. He is looking forward to officially becoming a member of the Confrérie at an Induction Ceremony, thus continuing his journey of culinary innovation and gastronomic sharing.
