Nicolas joined the Chaîne in 2023. His Four Seasons career began in 2004 as an Assistant Steward Manager in his native France and now is Resort Manager at Four Seasons Resort Bali at Jimbaran Bay. He moved to the island in 2018 as Food and Beverage Director being promoted to Resort Manager in 2021 with responsibility for the Food and Beverage, Rooms and Engineering divisions. Nicholas’ success comes from channelling his vibrant energy into innovative experiences, staff training and development, to deliver the highest standard of service to guests. This Maître Hôtelier is described as creative, passionate, curious and friendly. He brings strong experience in food and beverage innovation across both urban and resort properties in Europe and Asia.
Bali has become his second home with his wife and daughter. He loves exploring the island’s diverse landscapes in his free time. Climbing volcanos, trekking to waterfalls, beach hopping and canyoning - and of course, enjoying the vibrancy of Bali’s world-class dining scene.
Bailliage of Bali event with the theme of “Bali chic”
On Saturday August 24th the Bailliage of Bali held a dinner at Sundara Restaurant, Four Seasons Resort, Jimbaran, Bali. Vice-Chargée de Presse Leonie Heyder wrote that cocktails and canapes were served on the balcony of the private dining room overlooking Jimbaran Bay at sunset where approximately 30 members and guests were entertained by live music from a trio ensemble. This set the scene perfectly for dinner. Bailli of Bali, Cetin Candan, delivered opening remarks and introduced the history of the Chaîne des Rôtisseurs. Mr Candan then introduced Chef David Gavin and Sommelier Mr Newiani, both of whom presented the dishes and the wines for the evening. Chef David produced an artistic and equally delicious six course dinner along with amuse bouche and homemade chocolate bon bons.
Nicolas Senes summed up the resort’s ethos when he said, “The ultimate goal is to facilitate surprising, memorable and personalised experiences for our guests on a daily basis. If guests reflect upon their stay in Bali as a perfect getaway, then we have all done our jobs.”
