It is led by Executive Chef and Proprietor Nutcha Phanthoupheng, a Maître Rôtisseur with a background in nursing and cancer research. Baan Lao places a strong emphasis on the connection between food, health, and wellness. Chef Nutcha’s dedication to using fresh, organic, and natural ingredients ensures that every dish is both nutritious and bursting with flavour. Her focus on wellness is reflected in the care taken in selecting ingredients, all sourced directly from farmers, fishers, and growers committed to sustainability.

At Baan Lao, the philosophy of environmental protection is woven into every aspect of the dining experience. The restaurant exclusively uses organic and wild-caught ingredients, with a careful avoidance of harmful chemicals. This commitment is exemplified by their organic rice, which includes varieties like Hom Mali Thai jasmine rice, riceberry, and glutinous rice, grown in the Chef’s family fields in Khon Kaen, Thailand.

In addition to rice, Chef Nutcha enhances the flavours of each dish by cultivating her own organic microgreens. Baan Lao’s dedication to sustainability extends to their meat selection as well. Organic, sustainably raised pork, beef, chicken, and duck are sourced from Sumas Mountain Farms and delivered fresh daily. Even the fish sauce, a key element of Thai cuisine, is sourced from Megachef, a brand renowned for its organic quality and used in Michelin-starred restaurants across Thailand.

Born in Isaan, Thailand, Chef Nutcha Phanthoupheng’s love for traditional Thai cuisine blossomed at an early age. Raised on a farm, she learned to fish, forage, and cook from scratch, which instilled in her a deep respect for organic ingredients.

After earning a BSc and working as a nurse, Chef Nutcha became a cancer researcher, driven by her passion for understanding the health risks linked to food contamination. Moving to Vancouver in 2014, she pursued her culinary dream, training under Michelin-starred chefs Chumpol Jangprai and Vichit Mukura.

In 2021, she opened Baan Lao Fine Thai Cuisine, quickly earning accolades, including being named one of Canada’s Best New Restaurants and receiving the prestigious Thai Select Signature certification. In 2024, she added Canada’s Best Restaurant award to her collection and she is to be a judge for the British Columbia Regional and Canadian National Jeunes Chefs Rôtisseurs Competition, further cementing her influence in the culinary world.
