A tribute to family cooking

" Mediterranea, a work which, beyond recipes, celebrates the soul of the Mediterranean and the women who keep its flavours and traditions alive "

The Bailliage of Tunisia is delighted to see its Conseiller Culinaire, Lamia Temimi, contribute to a major international publishing project: “Mediterranea - Life-perfected recipes from grandmothers of the Mediterranean”, authored by writer and journalist Anastasia Miari.

Anastasia Miari, a British national of Greek origin, specializes in Mediterranean gastronomy and cultures. Through her books and reports, she highlights women’s stories and culinary traditions.

This book, a tribute to family cooking and to stories handed down from generation to generation, perfectly illustrates the values championed by the Chaîne des Rôtisseurs: the transmission of knowledge, the promotion of culinary heritage, and gastronomic excellence.

In this work, Lamia chose to share a recipe emblematic of her Algerian paternal roots: “ghareif”, also known as “baghrir” or “thousand-hole pancakes”. At once humble and refined, this dish demonstrates how Mediterranean cuisine is steeped in memory, culture, and emotion.

Having already contributed to highlighting her Sicilian maternal heritage within the framework of Cap Bon’s candidacy for the title of World Region of Gastronomy 2028, she now expresses through this participation the depth of her attachment to family culinary traditions, in perfect harmony with the spirit of our confraternity.

The Bailliage warmly congratulates this fine contribution and encourages its members to discover Mediterranea, a work which, beyond recipes, celebrates the soul of the Mediterranean and the women who keep its flavours and traditions alive.
