The town of Falun is in the middle of Scandinavia just a few hours northwest of Sweden’s capital, Stockholm. For most Swedes Falun is known for its more than a thousand-year-old copper mine which closed as a working mine a few years ago. The area is now an UNESCO World Heritage Site.

It’s a place of fantastic gastronomy hence chosen as the venue of Sweden’s Grand Chapitre of 2025 hosted by the Bailliage of Dalarna. A good number of members and guests travelled from all over Sweden and neighbouring countries to this three-day event in Falun and the surrounding area.

Friday evening: three Chaîne establishments proved their professional skills serving regional top gastronomy. The Maîtres and their teams at the Solgårdskrogen, Bruntegården and Tällbergsgården restaurants did an outstanding job making everyone feel more than special.

Saturday: a free of choice of excursions to various sites was included. Of course, a tour of the copper mine was on the programme together with a visit to the famous Arts and Crafts movement artist Carl Larsson’s home as well as the local brewery Oppigårds.

The Induction Ceremony held at the Grand Hotel was presided over by Bailli Délégué of Finland Johanna Hornborg acting as the representative of our President in her capacity as a Member of the Conseil Magistral. Some 50 members were inducted or promoted, both to Chaîne and OMGD (Ordre Mondial des Gourmets Dégustateurs).

The Gala Dinner which included high class regional gastronomy was designed by Maître Rôtisseur Ingemar Eberståhl and his team. September being harvest time and hunting season a wide range of tastes such as bear, local salmon, arctic char, reindeer, chanterelles and local cheese was provided. Dessert included flavours from lingonberries, cloudberries, blueberries, fieldberries and raspberries. A choir provided entertainment singing of course on the theme food and wine.

This year’s Grand Chapitre in the Bailliage of Dalarna provided everything the members could expect and well worth the trip inland. Fantastic scenery, history, a copper mine and great Chaîne professionals and their teams wowing everyone with their gastronomic wonders!
