The story of Thierry Blouet, Bailli Délégué of Mexico and who is a Member of the Conseil Magistral, is a testament to culinary heritage and dedication that dates to the very origins of our association.

His grandfather, Max Blouet, Director of the prestigious Hôtel George V in Paris, was one of the founders of the first Chaîne group, and his father continued this tradition during his tenure at the Hotel Continental in Mexico City.

Thierry himself began his journey in the association at age 22, winning the national competition for young chefs becoming the best representative from Mexico obtaining Bronze in the Worldwide competition. This marked the beginning of a life dedicated to promoting the values of the Chaîne: camaraderie, gastronomic excellence, and support for emerging talent.

By Thierry’s side his wife Rosa Blouet has been a fundamental part of integrating the Chaîne into their personal and professional lives. For Rosa, the association represents a unique opportunity for fellowship between professionals and enthusiasts, where travelling the world and sharing extraordinary tables - such as her memorable experience in Istanbul - has become a way of life. Together, they have navigated the organization’s evolution, celebrating how the Chaîne has moved from segregated events to total integration, where women and new generations play a leading role in the social and professional scene.

This year, Thierry celebrates a monumental milestone with the publication of his new book commemorating 35 years of his iconic restaurant, Café des Artistes. This work, an artistic masterpiece of over 200 pages photographed by Nacho Urquiza, not only compiles recipes from his four restaurants but also narrates his personal and artistic history. Thierry has announced a special edition of 350 copies dedicated exclusively to members in Mexico, while the English version aims to position the richness of the Mexican cultural mosaic in the world’s most prestigious editorial competitions.

In his role as Bailli Délégué, Thierry Blouet determinedly faces the challenges of consolidating the association in Mexico, with the ambitious goal of reaching 500 members and expanding the Chaîne’s presence to key cities such as Monterrey, Querétaro, and Mérida. His primary focus lies in maintaining the enthusiasm of current members while attracting young blood, ensuring that the organization remains a vibrant and relevant space for the exchange of high-level culinary knowledge and experiences.

One of the missions closest to Thierry’s heart is the promotion of young Mexican talent through the International Jeunes Chefs Rôtisseurs Competition. After years of participating as a gastronomic advisor and international judge, his goal is clear: to bring a Mexican back to the world podium. Thierry recognizes that the greatest challenge is technical preparation and mental discipline; therefore, he advocates for greater corporate support that allows contestants to train intensively for a full year to compete at the level of European standards, both in the kitchen and in the sommelier field.

Finally, Thierry and Rosa remain tireless ambassadors for the warmth and beauty of Mexico to the international community. Despite the challenges that tourism has faced in locations like Puerto Vallarta, he highlights the city’s resilience and the unwavering hospitality of its people.
