The Bailliage of India celebrated World Chaîne Day 2026 with an elegant and vibrant informal dinner hosted at Aqua, the stylish open-air venue at The Park Bangalore. Hosted by Maître Hôtelier Kiron Kumar and his dedicated team, the evening brought together members of the Chaîne in a spirit of camaraderie, gastronomy, and fellowship that defines the global association.

Held as part of the worldwide World Chaîne Day celebrations, the Bengaluru gathering reflected the Chaîne’s enduring values of friendship, culinary appreciation, and the art of the table. The warm alfresco ambience of Aqua, illuminated with vibrant lighting and elegant décor, created the perfect setting for members to reconnect and celebrate alongside fellow Chaîne enthusiasts across the globe. Photographs capturing members proudly displaying the World Chaîne Day insignia further reflected the celebratory and convivial mood of the evening.

A culinary journey across India
The specially curated menu took members on an immersive gastronomic journey across India’s landscapes and culinary traditions, beautifully conceptualised around the themes of ‘Desert, Mountain, Sea, and Forest’.

The “Desert” explored the bold flavours of Rajasthan and Gujarat with dishes such as Khandvi, Jungli Maas, Laal Maas, Gulab Jamun Ka korma, and Chicken and Paneer Ka Sula. Desserts including Mini Ghevar with rabri and an inventive Jalebi Tiramisu added a contemporary flourish to traditional flavours.

The menu then travelled to the “Mountain” regions of Nagaland and Manipur, showcasing indigenous and robust flavours through Sinju salad, pickled beef, Naga pork curry, ‘Chicken in Dry’ bamboo shoots, and Manipuri black rice. Interactive stations featuring King chilli wings and Portobello mushrooms in Michinga introduced guests to the complexity and depth of Northeastern Indian cuisine.

The “Coastal” element, themed “Sea: Goa and Maharashtra,” celebrated western coastal flavours with prawn Balchao, Malvani Fanas, chicken Xacuti, Malvani fish curry, and Misal Pav. The refreshing Iced apple & coconut terrine provided a light and elegant conclusion to the course.

The final culinary segment drew inspiration from the forests of Bandipur and the Nilgiris. Dishes such as Kummu taco with peppery wild mushrooms and mutton Nilgiri served with ragi mudde tart reflected earthy regional flavours and native ingredients. The dessert of wild figs and choux buns offered a refined finale.

An international wine experience
Complementing the menu was a thoughtfully selected international wine programme from Brindco that further raised the evening’s exceptional dining experience. Members enjoyed wines from celebrated wine-producing regions across the world, including Klein Constantia Riesling from South Africa, Donnafugata Prio Lucido from Sicily, Viña Errázuriz Estate Reserva Carmenère from Chile, Loveblock Pinot Noir from New Zealand, and the distinctive Poison Rosé from Provence, France.

The curated wine selections, presented by Brindco Group Sommelier Ravi Punia, paired harmoniously with the regional Indian flavours, highlighting the versatility of both the cuisine and the wines. The Riesling’s crisp minerality complemented the spice-driven dishes, while the Pinot Noir and Carmenère provided elegant structure alongside the richer meat preparations.

An evening of fellowship and celebration
The evening unfolded in true Chaîne spirit, where conversations around gastronomy, travel, wine and culture flowed effortlessly among members and guests. The elegant hospitality extended by the team at The Park Bangalore ensured a memorable celebration marked by warmth, refinement, and impeccable service.
