Against the breathtaking backdrop of the majestic Mina A’Salam at Madinat Jumeirah, the Bailliage’s Annual Chapitre in Dubai welcomed 129 members and guests for an unforgettable evening celebrating gastronomy, fellowship, tradition and achievement.
Set within one of Dubai’s most iconic destinations, the evening embodied the spirit of “Growth and Belonging”. This embraces the theme of the UAE Year of the Family which is a celebration of unity, heritage and the values that bind communities together.
Thus 2026 marks a significant chapter for the National Bailliage of United Arab Emirates with 21 member promotions recognising continued commitment and service to the organisation. Furthermore, we proudly welcomed 25 newly inducted Dames and Chevaliers bringing new energy and enthusiasm into our growing community. The professional ranks were further strengthened with the induction of two new professional chefs. Seven members joined the Ordre Mondial des Gourmets Dégustateurs (OMGD) reflecting a deepening appreciation for wine and the art of gastronomy.
One of the evening’s most exciting highlights was the launch of the Chaîne Cigar Club UAE, an initiative bringing together members who share a passion for cigars, fellowship and curated experiences. Launched with 16 founder members, the Club represents an exciting addition to the National Bailliage’s family and opens up a new chapter of experiences beyond the dining table.
The evening also celebrated excellence through distinguished awards. The Fouad Barahim Award was presented to Girl & The Goose while the Asufra Award was awarded to Farmhouse by Syrco recognising outstanding contributions to culinary excellence and innovation.
Under the guidance of Executive Sous Chef Bastien Lhabitant, together with the Madinat Jumeirah culinary brigade, the evening’s menu delivered a culinary journey inspired by and thoughtfully designed around the values of family, connection and shared experiences.
Guests began the evening with elegant pass-around canapés including foie gras terrine with Medjool date chutney which was a beautiful marriage of classic French indulgence with regional flavours. Alongside was King crab salad with citrus and mango gel offering freshness and vibrancy. A fig and feta tartlet added a delicate vegetarian note. Champagne Veuve Clicquot ‘Yellow Label’ was the accompaniment.
Adding an exceptional local touch was a spectacular Dibba oyster station showcasing the Middle East’s first gourmet oyster farm.
The culinary experience continued with a visually striking roasted beetroot flower with Oscietra caviar, labneh and dill oil followed by a delicate Miso glazed leek with yuzu dressing. Also, an elegant rabbit “Bouchée à la Reine” with tender rabbit fillet, liver, tarragon and Madeira cream sauce.
The main journey progressed with a beautifully prepare roasted Chilean seabass with bouillabaisse, saffron aioli, Ratte potato and baby fennel. A refreshing Trou Bourguignon sorbet was next. Guest then enjoyed an exquisite Angus tenderloin with potato Millefeuille, pepper sauce and Parmesan cream. Carefully selected wines from France and Spain were the pairings.
Dessert concluded the culinary experience with an elegant Vacherin framboise verveine followed by Brie de Meaux with fruits du Mandiant and a delightful selection of petits fours including milk chocolate choux, pistachio macaron and raspberry tartlet.
Beyond the exceptional cuisine, the evening reflected the very values championed by the UAE Year of Family initiative: togetherness, belonging and connection. Throughout the evening conversations flowed effortlessly as members and guests celebrated not only gastronomy but also friendships, mentorships and shared memories.
The National Bailliage’s annual Gala Induction Event in Dubai was more than an evening of culinary excellence. It was a celebration of growth, family and fellowship. A true reflection of the spirit of the Chaîne.
