Chef Jordi Bernus, a close associate of world-famous chef Ferran Adrià formerly of El Bulli, is now at The Ritz Carlton Jakarta’s Lobo Restaurant.
He was invited to The Ritz Carlton Bangalore in October during which visit he conceptualized and created a memorable five-course dinner for members of the Bailliage of Bangalore.
The evening, entitled “A Spanish sojourn”, was a lavish repast featuring Spanish wines – from noted Spanish winemaker Torres – paired with dishes such as Parmesan popcorn, slow-cooked egg, porcini foam, salmon roe and sous vide short ribs.
Chef Jordi only decided on the menu after his arrival in India, thus adding an element of surprise for the 40 members and guests who participated!
The dinner started on a sparkling note with fizz at the reception.
The group then moved to the hotel’s Riwaz Restaurant which was elegantly arrayed for the dinner.
As a mid-dinner surprise, Chef Jordi stepped out from the open show kitchen of the restaurant to whip up a magical conconction of Parmesan ice-cream, in billowing clouds of smoke, and aided by Ritz Carlton's Executive Chef Anupam Banerjee, Maître Rôtisseur.
It was another memorable evening of world-class cuisine for Chaîne members in Bangalore, all of whom are keenly awaiting the next event!
