Bailli David Weinberg and Chambellan Provincial Chick Marshall, of the Bailliages of Newport Beach and South Coast respectively, planned and hosted a joint lunch at the Inn at the Mission in San Juan Capistrano on a very sunny September day.

Our hosts arranged a guided tour of the historic Mission next door immediately following lunch. This beautiful Marriott Autograph Collection property was completed and opened in 2020.

Executive Chef Aaron Obregon was pleased to plan the Spanish/Mexican inspired luncheon enjoyed by the confrères and guests in a Spanish style courtyard under umbrellas sheltered by olive trees.

Chef Obregon says “Los Angeles is where my story began as a student at Le Cordon Bleu. As I am passionate about the history of Mexican cuisine, and in love with Mexico, it wasn’t a surprise that I decided to move to Mexico City upon graduation. Each day that we live, we are presented with unexpected discoveries. My discovery was learning the value of Mexican cuisine and the real colours of Mexico”.

His varied experiences in Mexico City and the USA allowed him to cultivate his expertise as a fine chef in demand. The courses he planned for us reflected this seasoned range and the entrée included elements from his childhood.

Hibiscus cured hamachi toast
pickled pearl onion, burnt garlic aioli
jamon Iberico, salmon roe

“Grandma’s” thin pasta
pasilla chipotle sauce, green peas, queso fresco
served with a choice of two proteins
Abodaba roasted porchetta, mole coloradito, cashew gremolata
or
Pepita crusted local tuna, truffle asparagus sauce

Vice-Échanson David Ashkenazi shared entertaining, interesting facts about the wines chosen for each course.

Also in attendance were Bailli Provincial Phil Kress and his wife, Vice-Chargée des Missions Honoraire Daryl Kress; Chef Rôtisseur Tony Esnault and his wife Restaurateur Yassmin Samardi who are owners of Knife Pleat.

Chef Obregon came out with his kitchen team and introduced each one with their special contributions to our meal experience. Bailli Weinberg gifted pins to them all as they did a terrific job!!
