Revisiting the history of the Chaîne
" The results were announced at the Tavola Food Trade Fair held at Kortrijk Xpo "

To date the “Dolce Grillardeurs” competition has been a BBQ one with spectators encouraging the participants and with Michelin starred Chefs forming the panel of judges. However, this year we were not able to stage an in-person competition because of ongoing COVID-19 restrictions.

Nevertheless, not wanting to cancel the event altogether we came up with the idea of organising the event whereby the individual competitors would make a video of their entry.

Chevalier Jan De kimpe delivered to all taking part a “Black Box” of ingredients from our partner Sligro – Ispc. For this year’s theme we wanted to go back to the history of the Chaîne of the Rôtisseurs. Accordingly, each box included a goose!

The participants had the task of developing a recipe with the goose and then to take a film of their preparing the dish.

Competition judges were Conseiller Culinaire Jean Baptiste Thomaes and Maître Rôtisseur Bart Tanghe, our Bailliage’s photographer/video specialist.

The results were announced at the Tavola Food Trade Fair held at Kortrijk Xpo.

This makes Tavola one of the most attractive, premium quality food trade fairs in Europe.

Chargé de Missions Jelbrich Hendrickx and Chevalier Henri Decubber formed the publicity committee to inform all participants about the Chaîne. Through the good offices of Dolce World, members of the Chaîne were invited to the Fair and attend a reception - with the simple proviso that they wore their Chaîne ribbons. Of course!

As well as the certificates prepared by the Bailliage, Dame de la Chaîne Karin Den Dulk offered the winning teams a wooden cutting board from her company ATMK. Maître Rôtisseur Marissa Herman and Dame la Chaîne Inge Shraepen offered a range of Verstegen spices.

After due deliberation, the judges decided that, out of the five participating teams, the winners were:
- the “Smokey Devils” for the “Best overall creative combination”
- the “Forest Grill Smokers” for the “Best overall video based on quality, personal touch and natural captions”.

Besides having a lot of fun, this event was a fantastic opportunity for the Bailliage to promote the Chaîne and develop its reputation in the hospitality industry and food trade supply sector.
