Susanna Foo's Chinese New Year Dinner

The Bailliage held a very special evening hosted by a true culinary legend, Maître Restaurateur Susanna Foo! Chef Susanna Foo is a long-time friend of the Chaîne and newly-inducted member of the Bailliage - as of our December 2021 Induction Dinner.

For those who don’t know, Susanna Foo is a Chinese Chef best known for her work in Chinese/French fusion at her eponymous Susanna Foo restaurant in downtown Philadelphia.

According to a Chinese proverb “To the Ruler, the People are Heaven; to the People, Food is Heaven”. On February 21st, Susanna brought a slice of heaven to the Bailliage members and their guests!

In honour of the Chinese New Year of the Tiger, Chef Foo partnered with Jack Chen, owner of Bai Wei Restaurant. Together they prepared a special menu that celebrated the traditional food served at a Chinese New Year table. Included were spring rolls, dumplings, steamed fish, vegetables and chicken.

Since eight is a lucky number in China, we dined at eight tables of eight guests (64 in total) and enjoyed an eight-course meal!

Traditionally Chinese food is paired with slightly sweet wines. After tasting 20 bottles at our tasting/pairing dinner, we were in agreement. Hence a French Rosé started the night followed by Gewürztraminer, Riesling, White Bordeaux and a Red Burgundy.
