Celebrating around the Bailliages
" events specially prepared to celebrate the joys of the table, culinary creativity and good fellowship "

Post-pandemic members and their guests gathered together for the Chaîne’s special day at events specially prepared to celebrate the joys of the table, culinary creativity and good fellowship.

This year’s World Chaîne Day had the theme of “green in all its forms”. Here is a resume of events around Canada. [Ed. Excluding that of the Bailliage of New Brunswick which is featured in a separate article.]

Bailliage of Alberta in Calgary
Vice-Chargée de Presse Ashley James reported that Bailliage members were eagerly awaiting celebrating World Chaîne Day as a group. Alas, it was not meant to be as quite unexpectedly the plans had to change. Members were therefore encouraged to support the many Chaîne establishments and create their own unique celebrations. Celebrations that were shared on social media included the Ranchmen’s Club, Vero Modern Bistro and Foreign Concept.

Bailliage of Manitoba
With Bailli Cameron Gray at its head, the Bailliage celebrated by holding its Final of the Jeunes Chefs Rôtisseurs Competition which Vice-Conseiller Culinaire Klaus Leiendecker organised at RRC Polytech. In the evening there was an outstanding dinner at St. Charles Country Club hosted by its Executive Chef Maître Rôtisseur Rain Regalado.

Bailliage of Montréal
Bailli André Cote led the celebrations at the Fairmont The Queen Elizabeth. The team at the hotel, including Officier Maître Hôtelier David Connor, Accor Hospitality’s Regional Vice-President for Eastern Canada, and Baptiste Peupion, Food and Beverage Director and Executive Chef, ensured that the event was a great success.

Bailliage of Val d’Okanagan
April 23rd was not only World Chaîne Day but also the Bailliage celebrated its inaugural event with a brunch at Quails Gate Winery in West Kelowna, British Columbia. A perfect day with a stunning view of Lake Okanagan greeted attendees. Celebrating with the new Bailli Lois Gilbert was Bailli Honoraire Helene Scott who is looking forward to helping grow the Bailliage.

Bailliage of Vancouver
Bailli Ann Collette reported that this year the Bailliage celebrated at The Vancouver Club, where acting General Manager and Chaîne Maître Restaurateur Tim Ellison led 40 enthusiastic members and friends through a fun and informal yet informative exploration of six different kinds of “bubbles” from around the world.

Bailliage of Victoria
Twenty-seven very trusting Chaîne Members and their partners arrived at the House of Boateng, not knowing anything about how the evening was going to unfold. The menu and wine list were secret, known only to host, Maître Rôtisseur and Executive Chef Castro Boateng, co-host and magician, Jason Verners and Bailli Gail Gabel. Why the secrecy? Because, in honour of World Chaîne Day, we were about to embark on a culinary journey none had experienced before. The plan was to explore each of our five senses through enjoying fine food and wines, as we recognised sound, taste, sight, smell and touch. Jason’s incredible magic demonstrated each sense and Chef Castro’s exquisite cuisine, interpreted the flavours that each of our five senses can recognise.
