" Rotisserie dinner at The Swiss Club "
To pay homage to the Chaîne’s rich heritage, the Bailliage organised a “rotisserie” dinner at The Swiss Club. Founded in 1871 by Otto Alder and his friends, the Club known for its motto “Home for all Nationalities”.
The event was attended by 90 members, along with families and friends.
Bailli Délégué Eng Fook Hoong, and his team, together with Chargé de Missions Edmund Toh who led the menu planning and preparation, curated a sumptuous dinner for the occasion. The highlight of the night was the 40 kg whole bluefin tuna, skilfully filleted by Chef Cash Fong using his “maguro bōchō” (lit. tuna cutter) - an extremely long, highly specialised Japanese knife used to fillet tuna as well as many other types of large ocean fish.
Culinary delights included ‘Rôtisserie and Charcoal Grill’ stations. A young lamb slowly roasted for four to six hours resulted in a wonderfully tender, juicy dish marinated with olive oil, lemon, mint, and basil. Also featured was the ‘Signature Swiss Raclette’ cheese station, serving Swiss Alps’ raclette made from semihard Alpine cow's milk cheese, accompanied by pickles, paprika powder, and baby potatoes - a perennial favourite.

It was a delightful evening at The Swiss Club. Heartfelt thanks went to the kitchen and service brigades for their hard work and dedication. Without them and their expertise, this evening of rôtisserie cuisine and wines would have been impossible to achieve.
As with any Chaîne evening coming to its conclusion, whilst the crackling fire slowly flickers and fades, the warmth of camaraderie and bonding lingered on.
