The Bailliage had a very belated celebration of World Chaîne Day (WCD) at the
well-renowned Italian restaurant, Prego. Owner and Head Chef, Joe Souti and his staff welcomed us with delicious house-made canapes accompanied by Berlucchi Franciacorta Saten.

Whilst the first entrée was served, Vice-Chancelier Sande Saulsman described the wine pairing. She explained that where two wines were offered with a particular dish, the Italian one represented ‘Old World Wine’ with Australian Selections being modern wines from the ‘New World’. Comparison of the two wines generated interesting discussion around the tables. The Old-World vintages tending to be well-rounded, full-bodied wines.

To end the evening, Bailli Thurston Saulsman invited Joe Souti to give us a brief explanation on how the dishes were prepared and cooked. Thurston thanked him and his staff for a thoroughly enjoyable experience.
