Apostolos Trastelis has more than 25 years of experience in the restaurant industry. Having opened 40 restaurant concepts his passion is helping his clients make their dreams “profitable and scalable.”
His establishment of a gastronomic and consulting management company resulted from experience gained from this long journey in gastronomy and the possession of 4 Michelin stars (Spondi**, Hytra*, Galazia Hytra*). He has collaborated with the most famous restaurant groups and luxury hotels in Greece.
Apostolos Trastelis's special journey in haute cuisine began in 1996 when he opened Spondi. This emblematic restaurant in Greece has since redefined the concept of haute cuisine. It has received a wealth of worldwide distinctions. His next business venture was Hytra which was awarded a Michelin star in 2010, a distinction it maintains to this day. Then he purchased Galazia Hytra and Fuga restaurants.
Spondi received its first star from Michelin in 2002. The second followed in 2008. It is the only restaurant in Greece currently holding a 2-star distinction from the iconic Guide. Voted among the 100 best restaurants in the world and a member of the ultra-premium family of Relais & Châteaux, Spondi is the only Greek restaurant to be included in the American restaurant guide Zagat.
Executive Chef Arnaud Bignon and his team invite you to discover a menu based on the restaurant’s timeless values. Exquisite ingredients from around the world meet raw materials from local producers who employ sustainable practices and “green” forms of energy, aiming at achieving zero waste philosophy and reducing the environmental footprint.
This landmark establishment of haute cuisine was the elegant location for a Bailliage of Greece dinner in December 2023. A delightful menu of four dishes was complemented by five matching wines which were very carefully selected from recognized wine makers. The famed highly professional service and cuisine were much enjoyed by the members and their guests.
