The new Papageno within the historic walls of Konstanz

Papageno has now returned to the old town. It’s located in a historic patrician house set within the medieval city wall which was the former Chaîne restaurant “Pinocchio”. Maître Rôtisseur Patrick Stier has designed his new restaurant in a wonderful blend of historical elements, modern colour and furniture, evoking Mozart’s Magic Flute. In addition to the larger dining room, charming cosy corners invite guests to linger where an aria of delights and a symphony of flavours are brought to your table.

The character Papageno, the bird catcher from Mozart's Magic Flute, lends his name to the restaurant. Completely renovated this year the restaurant subtly reflects the name Papageno. Feather-patterned tiles, animal and plant motifs, vertical struts and arches which evoke an aviary. The building’s history, dating back to approximately the 11th century and incorporating sections of the old city wall, is beautifully showcased in the exposed brickwork on both sides. History and modernity are perfectly interwoven.

Patrick Stier is known for his classic, Francophile cuisine. Even after moving to the centre of Konstanz, he has remained true to his classic style with Mediterranean influences. The strength of the restaurant’s team lies in every member of the team. In the kitchen, Head Chef Patrick is supported by Bastian Knoll, Christof Sollacher, two apprentices and two kitchen assistants.

Sommelier Pascal Roth and Restaurant Manager Mattis Neumann, expertly and professionally manage the restaurant’s service. This duo provides the restaurant’s clients with expert advice on the dishes and the perfect wine pairings. Pierre Marizzi and additional service staff complete the excellent service team. This is a young, dedicated group with a passion for their work.

In 2005, Patrick began his apprenticeship at the Kanne wine tavern in his hometown of Ellwangen/Jagst. After stints in Austria and Switzerland, Patrick finally arrived in Konstanz in 2009. After 10 years at Papageno, he took it over in 2019 and ran it for six years near the Swiss border. Since the summer of 2025 with business partner Benjamin Etter, Patrick has been developing the new Papageno into a culinary gourmet hotspot in the Lake Constance region.

At a Bailliage of Bodensee dinner in October, Bailli Henner Wolf and Patrick Stier warmly welcomed Chaîne friends from neighbouring Bailliages in Switzerland, Bavaria, and Baden-Württemberg who joined in merrily celebrating the new restaurant. Patrick once again spoiled everyone in the finest way: fresh, fruity ceviche of Arctic char with caviar and an exquisite lemon-thyme sorbet; lobster foam soup with shellfish ravioli; his famous sorrel sorbet as an interlude; delicately pink Barbary duck breast; and savarin with grape ragout and walnut ice cream.

Not surprisingly members and their guests were thrilled by what Patrick and his young team conjured up! Sommelier Patrick Roth, who was placed third in the 2025 National Final of the Jeunes Sommeliers Competition, guided us with expertise and charm through a harmoniously paired wine journey.

Thanks were extended to Patrick and his team for a wonderful evening full of delicious indulgence and heartfelt Chaîne camaraderie! Papageno is already widely known and the Bailliage of Bodensee wishes it continued success!
