High above the mist-shrouded peaks and lush valleys of Northern Thailand, the Bailliage of Grande North Thailand recently hosted its second Chapitre. This was not merely an Induction Ceremony; it was a sensory odyssey that combined the centuries-old traditions of the Chaîne with the ethereal beauty of the Thai highlands. Two distinct landscapes that define the region’s soul were spanned.
Valley prelude - Lanna hospitality
The festivities commenced in the fertile cradle of the Mae Rim valley. For the opening evening, Bailli Aarya Surindhara welcomed an international assembly of members and guests to the Farmer’s & Co farm estate. The “Welcome Cocktail” was a vibrant tribute to the Lanna spirit of hospitality which featured a casual, “market-style” dinner hosted on the expansive lawns.
As the sun set over the classic Mae Rim valley, the air was filled with the aromas of authentic northern and northeastern Thai delicacies. This grounded, rustic introduction offered a perfect counterpoint to the high-altitude elegance that would follow. It allowed guests to immerse themselves in the local culture and hospitality that remains the bedrock of the Bailliage.
“Gardens in the clouds”: a dreamlike stage
On the second day, the journey ascended to the Mollisol Agriculture Station, a venue that has become a hallmark tradition for the Bailliage.
Perched 1,200 metres above sea level, it overlooks Thailand’s highest peaks and the majestic Shan Plateau where the Himalayas reach their southern end. This location affectionately dubbed the “Gardens in the Clouds” served as a breathtaking natural amphitheatre. The setting offered a landscape that felt more like a cinematic dream than a physical destination. Perfectly encapsulating the Grande North identity: exclusive, serene, and deeply connected to the local terroir.
For the international delegation, the transition to the farmhouse was a journey into a private natural sanctuary. Under the leadership of Bailli Aarya Surindhara and the distinguished Committee of Franck Lafourcade, Phairoj Patsornpinyosakul, and Stephane Junca the event offered a stunning departure from traditional ballroom Galas. Here, the “ceiling” was the vast, open sky, and the “walls” were the undulating green ridges of the north.
A historic revelation
The 2026 Chapitre marked a watershed moment for the Bailliage with the induction of its first professional chef member: the legendary Olivier Elzer. With a staggering pedigree of 30 Michelin stars earned over 17 consecutive years, Chef Elzer’s arrival in Northern Thailand has sent ripples through the international culinary community. During the Modernist act of the evening, guests were treated to a world-first: an exclusive preview of Le Manoir Botanica, Chef Elzer’s upcoming restaurant in Chiang Mai. Operating in a groundbreaking collaboration with Rimping, Chiang Mai’s premier authority on local and international flavours, Le Manoir Botanica represents a botanical evolution of French fine dining.
Chef Elzer’s three course rustic farm dinner was served as a manifesto for this new venture. It demonstrated how rigorous French technique can be used to elevate the soul of Chiang Mai’s hyper-local harvests.
The Rimping synergy: sourcing the ‘Soul of the North’
Central to the evening’s success was the collaboration with Rimping [Ed. a division of Rimping Supermarket dedicated to providing premium-quality products to the hospitality industry]. As a cornerstone of the Chiang Mai community, Rimping acted as the bridge between the farm and the table. By leveraging their “Local Talent” programme and deep-rooted connections with highland producers, Rimping ensured that Chef Elzer had access to the most exceptional, safe, and sustainably grown ingredients.
This synergy between international culinary mastery and local sourcing excellence allowed the “Botanica” concept to truly breathe. Rare agricultural treasures of the Thai highlands were showcased to an international audience.
Artistry beyond the plate: the harmony of nature and music
The uniqueness of the event lay in its seamless integration of performance art. The Arts & Nature Music Ensemble provided a living soundtrack that evolved with the day’s progression, structured into three distinct “Acts”.
A cultural bridge
The Induction Ceremony, presided over by Bailli Délégué Joe Prasobsook Thawilwejjakul, who is also a Member of the Conseils d’Administration and Magistral, reinforced the Bailliage’s commitment to cultural preservation.
By blending the elegance of the French art de vivre with the renowned hospitality of Lanna culture, the event successfully established Northern Thailand as a premier destination for global gastronomes.
